Just extract the iTunesSetup.exe using winrar and you will get 7 *.MSI packages: AppleMobileDeviceSupport.msi AppleSoftwareUpdate.msi Bonjour.msi iTunes.msi MobileMe.msi QuickTime.msi SetupAdmin.exe you need to install all except the last two(earlier versions didn't have this issue) If you want itunes but not quicktime the best way to do that is to install itunes with quicktime, uninstall quicktime and install "QuickTime Alternative". it works with 8.0.2.20. Just extract the iTunesSetup.exe using winrar and you will get 7 *.MSI packages:

AppleMobileDeviceSupport.msi
AppleSoftwareUpdate.msi
Bonjour.msi
iTunes.msi
MobileMe.msi
QuickTime.msi
SetupAdmin.exe

If you want itunes but not quicktime the best way to do that is to install itunes with quicktime, uninstall quicktime and install “QuickTime Alternative”.
